Preheat your oven and bake the frozen pastry shells according to package instructions. Place them on a lined baking sheet for even baking.

Prepare the Peach Filling
While the pastry cups are baking, combine the peach chunks and Ceres Peach Juice Blend in a saucepan over medium heat. Bring to a gentle simmer, then reduce to low heat.
1 cup Ceres Peach Juice Blend, 1 cup frozen or canned peach chunks
Add a dash of cinnamon and whisk in the Simply Desserts Sugar Free Peach Jel. Continue to simmer, whisking occasionally, until the mixture thickens into a peach pie filling consistency.
