Butterscotch Brownie Sundae

Add the heavy whipping cream/coconut cream along with the sachet of butterscotch pudding mix to a mixing bowl. Whip on high for 2 minutes until fluffy and combined.

Fold the crushed Goodie Girl sandwich cookies into the butterscotch ice cream base.

Transfer the mixture into a loaf tin or other freezer container. Top with more crushed chocolate cookies and a drizzle of caramel sauce.

Place in the freezer for at least 3 hours to set.

Line your serving cups with drizzles of chocolate and caramel sauce. Scoop up the butterscotch brownie ice cream and top with whipped cream and more chocolate sauce and enjoy!
