Method

7 steps

Slice the bananas

  1. Peel and cut bananas into 0.8 cm slices.

Make the base batter

  1. In a blender, combine the eggs, milk, and pumpkin purée. Blend on low speed (1–2) for 30 seconds.

Add dry ingredients

  1. To the mixture, add the self-rising flour, cinnamon, and Simply Desserts Banana Pudding mix. Blend again on a higher speed (8–9) for 40 seconds.

Coat banana slices

  1. Gently dip the banana slices into the batter until fully coated.

Prepare your pan:

  1. Lightly brush a non-stick pan with oil or butter and heat it over medium heat.

Cook

  1. Place the coated banana slices in the pan and cook for about 3 minutes per side, or until golden brown.

  2. Plate with fresh banana slices or berries, and drizzle with maple syrup for a final touch.
