With an electric mixer, whip the heavy cream, vanilla extract and the envelope of Simply Desserts pudding until soft peaks are formed in the cream.

To Assemble

Start by adding pound cake into the bottom of the glasses.
Next layer on cream mixture and strawberries evenly to each jar.
Repeat, finishing with strawberries on top.
Garnish with fresh mint.
